Why we like it
Harvest takes place in late September and the best and best exposed grapes are selected and handpicked. Destemming and gentle pressing follow. Fermentation occurs at controlled temperature of 26 ° - 28 ° C in stainless stell tanks. Maceration lasts 15 days with daily delestage and pumping over. Refermentation of the wine made at the end of September on Amarone and Recioto skins for 10 days. Macion ages for 12 months in French barriques and tonneaux. A further 8-month bottle ageing occurs.
Ideal with classic roasts and first courses, such as stuffed or baked pasta. Interestingly paired with slivers of Monteveronese DOP cheese.
