Why we like it
Harvest takes place in late September and the best and best exposed grapes are selected and handpicked. Destemming, short cryomaceration and gentle pressing follow.
Fermentation occurs at controlled temperature of 14 °- 16 ° C. Our Ca’ del Moro ages for 6 months on fine lees in stainless steel tanks. A further 1-month bottle ageing occurs.
Excellent with risotto and fish-based main courses. Interestingly paired with fresh goat and sheep cheese.
