Why we like it
Harvest takes place in late September and the best and best exposed grapes are selected and handpicked. Our grapes dry in drying rooms, with weight loss of 45-50%. Destemming and gentle pressing follow. Fermentation occurs in stainless steel tanks at controlled temperature of 15 ° - 18° C. Racking of still sweet wine, cooling and cleaning with several racking operations to stop alcoholic fermentation. Maceration lasts 20 days with frequent pumping over. Recioto ages for 12 months in French oak barriques. A further 6-month bottle ageing occurs.
Perfect with dark and milk chocolate dessert. Delicious with blue cheese, even spicy ones. Enjoy Recioto della Valpolicella on its own or with a good Tuscan cigar.
