Brilliant garnet color, with hints of ruby red. The nose presents with aromas of cherries, violets and berries, complex notes of aromatic herbs and a slight spiciness. The palate is full and rich, with a velvety structure given by the perfectly integrated tannin. The minerality of the limestone soil and the acidity allow a great persistence of the aromas, with a fresh and precise finish.

Why we like it
Manual harvesting of the best grapes is carried out exclusively in the "Peratara" vineyard, which covers about 4.5ha. Given the high altitude of the vineyard, between 550 and 570m asl, and the high temperature range between day and night, the harvest lasts until the end of September. The name of the vineyard, pietraia in Veneto dialect, derives from the marl-calcareous soil particularly rich in skeleton of Cretaceous origin. Destemming and soft crushing of the grapes followed by fermentation in stainless steel tanks at a controlled temperature between 22°-24°C. 10 days of maceration with delestage periodic daily pumping over. 2 years of aging between large barrel, tonneaux, barrique and amphora. Further aging of 1 year in bottle.
Pairings
It pairs perfectly with first courses with full-bodied sauces, roasts and white meats, and medium-aged cheeses. Also try it with spicy dishes of oriental cuisine or boiled meats as per Veronese tradition.
