Why we like it
Harvest takes place in late September and the best and best exposed grapes are selected and handpicked. Destemming and gentle pressing follow. Fermentation occurs at controlled temperature of 22 ° -24 ° C in stainless steel tanks. Maceration lasts 10 days with daily delestage and pumping over. Formiga ages for 6 months in stainless steel tanks and 2 months in large barrels. A further 3-month bottle ageing occurs.
Perfect with pasta with elaborate sauces, grilled red meat and fatty fish.
