Why we like it
Harvest takes place in late September and the best and best exposed grapes are selected and handpicked. Our grapes dry in drying rooms for approximately 100 days, with a weight loss of 40%. A further grape selection takes place, followed by destemming and gentle pressing.
Fermentation lasts 30 days in stainless steel tanks; it occurs at controlled temperature of 15° - 20° C with daily delastage and light pumping over. Ciliegio ages for 36 months in new French oak barriques and tonneaux. A further 8-month bottle ageing occurs.
Pairings
Among the greatest red wines in the Italian tradition, Amarone calls for great structure and depth dishes. Interestingly paired with mature cheese and game. With ageing, it may be curious to be paired with dark chocolate and make it as a meditation wine.
