Why we like it
Harvest takes place in late September and the best and best exposed grapes are selected and handpicked. Destemming and gentle pressing follow. Fermentation occurs at controlled temperature of 24 ° - 26 ° C in stainless steel tanks. Maceration lasts 10 days with daily delestage and pumping over. Camponi ages for 6 months in stainless steel tanks. A further 3-month bottle ageing occurs.
Pairings
Perfect with Italian starters, soup and pasta but it is also interested as a summer red wine for fish dish.
