Tasting Notes

Why we like it

“Duomo” Spumante Brut:
Destemming, short cryomaceration on the skins. Gentle pressing and fermentation occur at controlled temperature of 14 °- 18 ° C. Second fermentation takes place at low temperatures in sealed tank.

“Duomo” Rosso Verona IGT 2020:
The harvest takes place at the end of September with manual picking and selection of the finest bunches that have been best exposed to the sun. Destemming and soft pressing of the grapes, followed by fermentation in stainless steel tanks at a controlled temperature of between 24° and 26°C. Ten days of maceration with daily pumping over and delestage. Six months in stainless steel tanks and three months in the bottle.

Pairings

“Duomo” Spumante Brut:
Perfect and enjoyable as an aperitif, but extraordinary with sea crudité.

“Duomo” Rosso Verona IGT 2020:
It pairs well with Italian appetisers, soups and pasta dishes, but is also ideal as a summer red wine for fish dishes.
